Baldur's Gate 3 runs on a modified version of D&D 5th Edition, which means a build is a plan for how you spend twelve character levels. The core decisions are your class and subclass, your ability score spread, and whether you multiclass. Multiclassing is where most of the powerful builds live, because combining a few levels of one class with the bulk of another can give you a damage type, a bonus action, or an armor proficiency that neither class offers alone. Spellcasters plan around spell slots and concentration, since only one concentration spell can run at a time and losing it to damage undoes a whole turn of setup. Martial builds plan around action economy instead, looking for ways to land more attacks or convert a bonus action into damage. Feats arrive at levels 4, 8, and 12 and can be worth more than an ability score increase. Equipment matters more than in tabletop, because many items in Act 2 and Act 3 grant effects that a build can be designed around outright.
